I used the wayback machine to go to an earlier version of Apple's website and find Safari Technology Preview 125, which is a version of 14.2. I'm not sure if this is the best way, since the previews may be unstable, but it does work.

Just tried Safari 15 and didn't like the UI and I'm not able to bookmark any Youtube video without crashing.
Tested this method myself. Works perfectly. Found this on Apple Developer forums (Re-wrote some of the instructions for clarity, enjoy)

Step 1 - In terminal type:

and press return.

Step 2 - When step 1 is finished enter:

pkgutil --expand-full Safari14.1.2MojaveAuto.pkg ~/Downloads/Safari

and press return

Step 3 - When step 2 is finished:

Open Finder and go to Downloads > Safari > Payload > Applications > Safari and double click this Safari application and save it in dock.

Safari 14 has the circular app logo, Safari 15 has the more square shaped app logo. You can use either and even set 14 to be the default.

Now, you may put this Safari.app whenever you want, but I urge you not to replace the original Safari.app file. It would be wiser either to put Safari 14 app file to another location, or name it Safari 14.app, for example. This will not cause any issues for you, and yes, you will be able to set this Safari 14 as a default web browser.

This is not directly on topic, but I just opened Safari—I don't use it at all—because of this thread, and it has an atrocious UI. Nothing but grey-on-grey. While this might appeal to a small segment of users (those who worship at the temple of "flat" design and might not matter to those under 25 who have grown up with this), colour DOES matter.
