Soon I will try to open the Mac and re use some thermal paste to see if this fix something , I didn’t mention it before but I did follow the exact same way this man did to put thermal paste

Good afternoon, I have the same problem.
The temperature sensor is displayed normally, as soon as it reaches 80 degrees - the programs crash. I have tried decreasing the memory / gpu frequency, setting the max performance for the PSU ... So far I have failed.

I understand that playing on such devices is not the best idea, but after everything I've done with the computer, I want to get the most of its capabilities.

I have two imac 2011 and on each I installed a gtx780m with Nik`a firmware.
 
At the moment, my experiments have led to the following:

I took apart my imac and installed additional thermal pads on the electronic components of the graphics card.

I reduced the consumption of the video card to 80w, after which I have seen stable performance in the stress test for over 20 minutes.

The main task is to prevent the video card from overheating over 80 degrees.
Usually, at this temperature, kepler video cards start throttling and it skips clock cycles. But on my device something is wrong and the video card stops working at all.

When consumed at 100w, the video card overheated over 80 degrees at any fan speed.

At 80w, the temperature dropped to 69-70 degrees Celsius and does not rise higher in the stress test. I will experiment further to get the best performance possible.

I have not yet found the reason why the video card stops working above 80 degrees.
