Just so I understand: You have a bootable macOS installer with the latest Catalina version 10.15.7, patched by Dosdude1's Catalina patcher. Is that correct?
If you have the macOS installer mounted on your Mac, then open System Preferences/Startup Disk pane (unlock that pane now), you should see your bootable installer as one of the selections. Good so far? If you mouse across the boot choices, you should see a macOS version number AND a build number.
What version and build number do you see for your patched bootable installer?

Thanks. I'm not at the house now, but the answer to your first question is Yes.

I will do the Startup Disk pane when I am back there. But I can tell you that under the About this Mac System Report it says the build number is 19A603.

Yes, that would be correct for a system booted from macOS 10.15
What I am asking about is the version for the system on your bootable installer.
Correct version will be 10.15.7 and build number 19H2.

Another check is the version of the installer app (Install macOS Catalina.app) that is part of your bootable installer. "Get Info" on that app. App version in that Info window will be version 15.7.02.

If you don't get either one, then you need to download the full macOS 10.15.7 (again). DosDude1's Catalina patcher app will get the correct one for you this time -- or try another method, such as the "gibMacOS.command" which is part of the gibMacOS-Master script folder. That's the one that I use most often, downloading every system from High Sierra to Big Sur beta.
Or, there's also the installinstallmacos python script, but that's sometimes a lot slower to download macOS, in my experience.

But if I downloaded the Catalina installer through the Dosdude installation software, shouldn't that have been 10.15.7 (or at least 10.15.6)?

Yes, you are correct, that should be good for the current version. But, if you downloaded through the patcher app within the last 2 weeks, and didn't get the current version (for some unknown reason), then you would need to try a different method to download the macOS installer app.
That's why I offered you other alternatives, and also a way to verify that you have whatever the current version should be.
I'm thinking the only way to end up with an outdated macOS version is that is the version that you had for the installer that you made. Somehow, the installer that you downloaded was an older version. Download the current version using a different method. You can still use the dosdude1 Catalina patcher app to make a patched installer, even if you downloaded the installer using a different method.

Couple of days ago I used dosdude1's Patcher Software 1.4.4, trying to install Catalina on my Mac Pro (Early 2009) MacPro5,1 - I followed step by step, up to the point where I finished making the USB Catalina installer drive. Tried a few times by holding the Option key to boot from the USB drive but my computer just hangs and nothing happens. My computer has 2 Intel Xeon 3.33 GHZ, 6-Core per processors with 32 GB of RAM. I have AMD Radeon RX 580 8 GB GPU. And the drive I am installing Catalina 15.7.02 to is a 1T SSD Mojave 10.14.6 OS drive.

So, I installed a new 2TB hard drive making it boot able drive with Catalina patcher. I then select the drive from the Startup Disk to boot from. After my computer booted I tried to convert the target drive to APFS by dismounting the drive first but the option to do so was greyed out and not available. Can any one help me with this.? I would really appreciated.!

Can't speak to the DosDude software, neither know nor care about it. But you can't unmount the drive you're booted from... think about it.

If you follow in the macOS Catalina for unsupported Macs you would see all the issues we are having with 10.15.4 and even on discord if you are on a fully supported Mac you can install macOS Catalina 10.15.4 from the software update no need you use the patcher, He did as several of us tried to install 10.15.4 including Dosdude and can't get into the desktop so he reveled it back so we can at least reinstall 10.15.3 which stable until the issues with AMFI and the other security checks Apple has place in the OS can be worked around
I have used the Catalina patcher to upgrade my 2009 (5,5) MBP and have just started to set it up to work with erlang elixir and phoenix using the asdf installer and using these instructions.

When I get to the running the mix local.hex command I get the following error
zsh: illegal hardware instruction mix local.hex

I have carried numerous searches on google for zsh: illegal hardware instruction but have not found the solution..

Tried this one

Apologies if I have posted this in the wrong forum.. I was so pleased wth the patcher and getting my MBP back into service that I made a donation - I hope I can get passed this problem.
