The best size is the one you like to use. And will use. Other opinions on what is right for you are irrelevant.

I had both back in 2017 and I've mentioned it in other threads, but I tended to use the smaller one way more often, but where I did use the 12.9 was when I was gigging and needed to read sheet music and also when I was creating art as well as doing things like editing in LumaFusion. Day to day I definitely used the smaller one more and when I traveled I use the smaller one typically.
In this case I'll do the same thing (once things go back to normal and can gig again... eventually). The 11-inch is my main one which is why I got it in 512GB w/cellular, I just got the base model 12.9. The screen on the 12.9 is drastically better when watching HDR so I'll probably use it for that as well.
Complete and total excess I know, but I don't really have any other hobbies that cost much money, debts are paid, etc etc - so screw it. In the worst case I'm sure I can sell one of these quite easily without losing too much money.

You could set one - the 12.9 - up as a pseudo-desktop with a Magic Keyboard (or stand with BT keyboard, even a mouse) and a hub with peripherals attached, e.g. drives and perhaps a monitor. The other is separate and portable, much as you might use a desktop and a laptop. But with a few disconnects, that pseudo-desktop also becomes portable. Just a different use paradigm. That's basically exactly what I'm doing hah. The 10.5 is in my bedroom. Maybe I should keep an iPad Mini in every other room in the house so I don't have to expend energy carting these things around! (I kid, I kid).
My new M1 12.9 is finding its place mostly on the desktop using a real keyboard and mouse. I turn it to portrait when using it as a kindle textbook reader for my Japanese studies because books here are a small form factor with tiny characters that are hard to read. And then I’m using it for writing practice with the pencil , as well as sketching.
That’s very expensive. I don’t think your wallet will be too happy.
