Do not change any settings.

You can enable SIP after completing the installation of Big Sur. The OCLP TUI autodetects your hardware and finds the best settings.

I tried another bigsur and same issue it restart once minutes remaining i done little research this lad same problem he said he remove some acid on efi and that fixed problem but I'm really sorry I got no knowledge about mac os do u know what he talking about this is his link https://www.insanelymac.com/forum/topic/344920-oc-efi-big-sur-installer-beta-4-quits-at-12-minutes/

This is all Hackintosh stuff and does not apply here.

The OCLP OpenCore version has been proven to work several hundred times on systems like this. If for some reason an installation fails to complete in most cases a restart picks up the current state and moves on.

I assume you started the disk utility from within the Big Sur installer to partition your disk and create a new APFS onto the new partition side by side with High Sierra?

You may use OCLP 0.3.1 with Big Sur or even 0.2.4 - all the later development has been made with Monterey in mind.

How i do opencore do u think im doing wrong I put my usb drive 32gb on Sierra before I do anything I format to journey with guid partion than I download big sur file than I open terminal write sudo after I go to right click big sur content resources ,than creat boot media I drag into terminal after creat boot I close it than I open opencore click build than than option 2 build usb than choose usb than press q to quit than restart imac to recovery after I go install big sur I tried both wipe hardrive or leave it with Sierra on it before install big sur on both time it goes till 12 minute remaining goes back to 13 than 12 tha restarts when it come back it shows me boot installer or boot big sur if I choose big sur it goes same recovery install menu if I leave on boot installer it starts 46 min than goes all the way to 1 min remaining and froze there

Come on!

Can we agree to write in complete sentences ending with a full stop?
I cannot read such a spaghetti writing, sorry!

The last minute remaining after the 46 minute count down can take up to two hours depending on the CPU and disk.
It does not freeze, it just needs the time to calculate the encryption used the secure the root volume.
I would assume your system would need 30-60 minutes on an SSD and two hours or more on an spinning HDD.

Yes, you can write OC to the internal drive from the beginning, too. Makes it more easy to use it.

But you cannot wipe the whole drive then during the installation (you would delete the OpenCore, too), you can only delete the partitions or existing APFS volumes. Do you understand this?

Hope your daughter will enjoy this gift :) We had a lot of work with it!

If you want to bring the system into the future spend her a small SSD instead of the rotating rust (HDD) and stick with Big Sur for the time being/coming unless all small bugs with Monterey have been solved!

Have a nice and silent time, stay healthy!
