I teach at a law school, and I've been really heartened over the past few years by the increasing numbers of Macs in the classroom (I actually don't really approve of laptops in the classroom, but if they're going to use something, they might as well use Macs). Go back three years and I'd see one or two iBooks or Powerbooks at most, but in this year's 1L class it looked like about 1/5 were MacBooks or MacBook Pros. The fact that we use exam software that has a Mac version (Securexam) no doubt helps.
As for me, I'm one of three Mac users on a faculty of 45 or so.

my ibook is old but i still love it...my wife made good money doing odd graphic design jobs on it in her spare time
i use the dual G4 power mac for internet and email and writing papers in law school
i think i am going to get a toshiba or hp in the $429-$599 dollar price range, at the local office depot, and use that laptop for exams and some papers
at this point, a laptop is just a tool and having been a pc tech for 8 years part time, i can make the thing work smoothly with tweaks and careful usage
of course, with a mac, as i have witnessed since my first use of one many years ago, is that they practically maintain themselves...and that's the beauty of a mac
as far as law school, it's tough (as has been the 9 months of prep for it) and very different than college or graduate school, and has a unique feel of some college, graduate school, trade school, and slow torture to it and mixed up into one hailstorm
in the past, i thought law school was only for lawyers, but some call it the "new mba" as i have seen here and there, but more often in recent years, and i am starting to agree
