For some reason I think we might see it ship a few days prior to the 3rd? Think it's possible?

I know in some other pre-orders I've been involved with (usually popular PC game launches) the shippers have occasionally accidentally broken street date. Does this not ever happen with Apple products?

Well, in the cases of games or media, these items are usually in stores several days before the sell date and the store is the one that breaks the street date, not the shipper.
In this case, Apple will be shipping directly to the consumer. The only way it will come early is if Apple ships too early and the local distribution center doesn't hold the item (mentioned earlier). Even if this happens, it won't be a wide spread situation.
I have a friend that works for Fed-EX Ground and the only two divisions that deliver on Sat. are Home delivery (which are sub-contractors which don't always go by protocol) and Express delivery (which are actual Fed-Ex employees) so if it is sent Home Delivery which is what I believe it will be shipped I think some people might get them early, but Friday 4/2 at the earliest and that's only because the drivers want to get home early as possible on a Sat. especially since its the day before Easter, but if Apple sends them Express, which I think is highly unlikely due to cost, because they are Fed-Ex employees they have no choice but to due what management says, however typically in most cities Fed-Ex Express has more drivers/trucks/resources
I sure as hell hope they ship before the 3rd. Apple committed to deliver on the 3rd and I live in Connecticut.
Is that common in the US? Over here when I ordered Leopard and Snow Leopard, Apple sent it on the day so of course I didn't receive it until later (and since both releases were on Fridays, I didn't get them until the following Mondays).

Alright, lets think back. When has Apple EVER shipped a product to people earlier than scheduled, at random?
I REALLY don't think it's going to happen, everyone will just have to wait it out.. not that hard to be honest.
