Apple trademarked Lynx and Cougar a while ago. So it will most likely be:
10.8 Lynx
10.9 Cougar
Then the move to OS 11.
Just because Apple trademarked them doesn't mean they will use them. Companies trademark names all the time just so competitors can't use them, or they believe maybe one day they'll get some use out of a trademark. It is just hard from a psychological stand point to go from the "King of the Jungle" to a Lynx. Though you are probably 99% correct.

So what would be the next move for the OS after Lion?
White Lion?

iOS integration is obvious.
Music, Videos, Games....basic work office stuff...media printing/web...still the same needs out there.
What else:
3D?
Holograms?
3D Printing?
No idea what a good name they will use..but it will be magical...revolutionary...
I think it'd be better if Apple drops the cat naming scheme..
Maybe 10.8 will be an incremental update, Mountain Lion.
Then 10.9 will be the last OS X release and will be known as Sabertooth.
