Which SSD size did you choose?

I ordered 2TB in my 16" M1 MBP. The main reason I went 2TB is that my family Photo Library is over 700GBs and any backup solution for iCloud Photo Library first requires that the originals be downloaded/kept on a mac. I considered the alternative option of using external HDs and just getting a smaller internal SSD, but decided against that because: 1) the speed of the mac's internal SSD; 2) Wear Leveling favors a larger SSD; 3) with the size/bulk of the 16" M1 MBP, adding on externals is undesirable; 4) the efficiency of onboard storage cuts down my editing time; 5) I would rather put the cost of a new external HD towards the internal drive.

I got 8 TB.

If you're working in music or film, you quickly reach a point where you need a lot of storage (a minute of 4K 30FPS ProRes video is already 6 GB, many music software sample libraries are several hundreds of gigabytes in size), and I can't be bothered to carry around a bunch of slow external hard drives everywhere I go.

The faster and more convenient workflow when not needing external drives is worth more to me than saving a couple hundred dollars on my laptop purchase.
I appreciate the logic, however it's worth noting that your 8TB SSD was significantly more than just "a couple hundred dollars" on your laptop purchase. The 8TB SSD is a whopping $2,200 extra on top of the 1TB SSD option (which, itself, is a couple hundred more than the base 512GB option).
