That may be so. I did not realize at the time that that' particular card had any issues with the mac 5,1. To be honest i didn't know there was any difference at all with the RX580 because i was/am a rookie at this and listened to the wrong people. What i can tell you from my personal experience as of today that XFX card is the ONLY RX580 that will work properly rendering graphics on MY mac. I don't know why, it's just the experience as of today.
It’s normal sometimes we are not aware of some technical issues the first time around. But being optimisitic and hoping that the XFX gpu will work fine in your Mac Pro. Thanks

I also tried adding this to the config, it may work for you. It worked for a week for me and may need to be tweaked in my case but maybe worth a shot. Add the following code to config:
Thanks. Do you know what this code does essentially? This kind of thing is way above my pay grade and I am not sure what I would be expecting to happen.

At the moment I have my original PSU back in the mac but its been working perfectly. Even using my original settings for 'macsfans' app I hardly ever hear the fans going, something that was very normal before I replaced the PSU. I have since put macsfans back on automatic (which I assume is apple's system settings) and all is still good.

I even ran both the stress test apps (CPU and GPU) mentioned above by tsialex @ 4K size for over 40 minutes with no adjustments to fans (I turned off macsfans and restarted first). All was perfect. It took quite a while before the Radeon's fans spun up (they always last much longer at high speed even when the stress is over, dying very slowly) - temps never went much over 80°C. I even tried a few more of the GPU tests for around 5 minutes or so, each at full 3840x2160 res and all was good. It might all be just a brief respite at the moment and all the grief will come back later though like an eye in the hurricane. Definitely seems that the 'rest' the PSU had on the shelf has helped things temporarily. But I fear the blackouts will come back.

From googling I see a lot of info about 'down volting' radeon cards, but I don't have access to a PC for the software they use. Maybe there is some kind of kext or something that works with OCore that can put the settings in? That's why I am curious about your config code.

But anyway, at the moment all is well and feels like new, even though this is the same config that I was having problems with earlier. The PSU I ordered is making its way here slowly so that's a backstop (or is it?). Unfortunately I can no longer find any new Radeon 580 cards for sale here so I would have to order from US or somewhere - a lot of expense to test things.

One thing I did notice now after all the googling was that the Sapphire box has a sticker on that says "overclock" and I am wondering if that might cause power draw issues? It doesn't say "Nitro" though so I am not sure if Alex's remarks apply to this?

Is there anyway of regulating the amp-age output for each slot so it doesn't exceed 8.0A? Mine exceed that amount for just an RX580.
The same guy from the video added EVGA Powerlink to help regulate the power...but for the RX580 should be below 8.0A like his numbers were later shown on the original video using the RX580 on another mac. He has another video showing him installing the Powerlink but was for the RX 6800 non XT card.
