The temperature looks good to me. Anyway, the real important one is the temperature when CPUs under stress. Put them under 100% load and check if the temperature still normal.

I think you can check eBay to have a rough idea of how much your old graphic card worth. They are real Mac Edition card, should worth a bit more then the flashed card.

I did stress test them yesterday and held up. I did stress test all 12 cores plus the hyper thread. It was under full load and the temp went up and the fan kicked in and the temp went down and it was stable. So far I am happy with it. Now to the next thing the HDD. I am still consider if I should get a regular ssd or the Kingston hyper x predator 1tb or a 1tb ssd. Will need to keep doing my research.

It depends do you really want / need a high speed SSD. If yes, then Kingston HyperX Predator is the way to go (I also prefer the 960GB one). Because SATA SSD will avail for another long period of time, and it will only getting better and better, cheaper and cheaper. However, PCIe AHCI SSD is not. The high end world is already moved to NVMe SSD. If you don't buy the HyperX Predator now. I doubt if it's possible to get another new PCIe AHCI SSD with reasonable price later.

I have decided to go with a Samsung SSD 1TB. got it for 299.00 instead of the 500 dollars. What mouse do you recommend for the Mac pro. When using the USB 3.0 Sonnettech. Now I am having issues with my magic mouse. but I have a different mouse that I am using for now. Anyways I guess there is no solution to this problem.

Keeping fairly well charged batteries in the MM might also help. I'm not sure about this but it's worth trying first. Also you might try disconnecting and then rediscovering and connecting your MM which is another unscientific but easy thing to try.

Maybe the Magic Mouse issue is BT interference due to having your Mac Pro under your desk. One possible solution for that would be to order a Gmyle USB BT dongle off of eBay and download Apple's Bluetooth Explorere to switch to it as your BT device. You can then position the dongle closer to your MM. You'll need to sign up as a Apple hardware developer to get access to the software which is or at least was easily accomplished when I did this for my 5,1 2009.

Magic Mouse issue has been solved. I bought a new mouse Logitech G602 and I love that mouse. I have program the button on the side for Launchpad, and finder. I used the extension cable for the mouse to be closed to where my mouse is located. After doing that my magic mouse starting working normally. I don't know what does the new mouse has to do with the magic mouse but now the magic mouse it no longer sluggish. I plugged in the cable for the new mouse in one of the USB 3 ports and run the cable and placed it in front of my monitor. Both mouse are working but I don't think I will be using my magic mouse any day soon since the new mouse performs better than my magic mouse.
