OK, not a photo pro or anything, but I'll chip in my 2cents.

Take a look at 3rd party RAM from NewEgg or Crucial. You can probably afford to add another gig if you don't have Apple do it for you. You can snag a stock machine with no wait that way as well.

Take your old copy of XP, install it on your Mac Pro and run the Windows version of PS on that 'till the Universal version arrives. I'm not sure, but I would guess that PS will run well with Parallels (it doesn't need the GPU, so shoudl be near native speed right?) meaning no reboots or anything like that.

Next year when CS3 comes out, assuming the use Core Image and what not you can snag a new/used video card and get all the crazy speed the MP has to offer.

Alright everyone, thanks a bunch. I have made up my mind on the 2.66 stock Mac Pro. Now I just have to still convince my parents to get it for me. I am only 17 mind you. I hope my mac experience is awesome haha.
 
If the absolute choice is between 2.0/2GB or 2.66/1GB (with no aftermarket upgrading to come), go with the former. No question. 1GB isn't enough to run the Mac Pro well, much less run Photoshop and edit images.

Yea, but I think this person has the ability to wait, save up a tiny bit and buy more ram later on which would really feel like a speedbump. That way he/she can have their cake and eat it (eventually)

I will be fine if it is not BLAZING fast right now. I can get ram eventually.
