Even after updating to 14.5, the problem persisted for me on my M3 MacBook Air. Unrelated, I was having trouble with my 2.4 GHz WiFi. I disabled 2.4 GHz for 5 GHz and also switched from WPA2 to WPA3 security. The Mail problem since stopped. It also solved the problem of Mail hanging when quitting it.

I realize that trying this potential solution may not be feasible for everyone.
 
I've just experienced this. In my case I had the main apple id (something@gmail.com) and an apple id alias - something-else@icloud.com

In Mail app which I never opened nor configured, which opened when I clicked an email link in Safari, there was default the apple id email address. But since apple smtp servers will not accept From emails ending with non-apple hosted domains, like google's @gmail.com, this message pops-up.

So what I did was go to Mail settings, accounts (the accounts in mail settings, NOT in iCloud System settings!), email address - Edit email addresses. Filled in my @icloud.com email and voila, I was able to use Hide my email!
