Has anyone tried MLB At Bat 11 on an iPad 2 with the Apple HDMI mirroring? Does that work?
I'll answer my own question -- No! It doesn't work. I'm very disappointed, but when you load MLB At Bat, the mirroring via HDMI turns off. You get audio, but no video out from the MLB At Bat app. It's apparent that MLB has disabled any video out from their app, apparently to force people to subscribe separately to MLB.TV video services.

Are you talking about the iPad 1? Because from my understanding, the iPad 2 is the only one that does video mirroring and it is not possible to block that. The iPad 1 when connected with the hdmi adapter does video out which has to be supported by the app itself but not video mirroring.
I have an iPad 2 and watched Spring Training games just fine using the HDMI with MLB AtBat 2011. I have not been able to watch real season games.
I called MLB and they insisted it was a setting at Apple.
1) That made no sense
2) I didn't have to call Apple for ST
3) That still makes no sense
But I called Apple. The tech said "That makes no sense." He had me switch the iPad 2's video settings around just to test, but he agreed that this is not anything on the Ipad2 but with MLBs settings.
How did you contact MLB? Maybe I'll try giving them a ring too.

Only mirroring, so most of the screen space is wasted.
I emailed them thanking for step 1 and asking for fullscreen, and they told me to call so they could troubleshoot my problem.
