You can, however, find (more expensive) services that offer more business-important features -- like nightly backups and geographic redundancy. Some sites even claim to offer 99.99% uptime or somesuch; while I imagine that this isn't guaranteed, they probably try to meet that goal.

That is really my point "while I imagine that this isn't guaranteed".

I guess I am assuming Apple would like their service (which is a paid for service) to be available pretty much 100% of the time. I expect some down time but not much. As you know this past year even the Blackberry Service was down for an extended period of time (some server failures - multiple times). I think all services will have a certain amount of downtime. I would not expect MobileMe to be much different once they get the initial problems worked out.

What I do expect from a more expensive service would be a "Remote Wipe" feature that you can get with the Blackberry or Exchange Service. This would be nice for business users. But even for personal use it would be nice to have my iPhone Wiped Clean if I lost it. Again, this may not be required by all users.
