I think I understand Thunderbolt but one question I have is...

If the new iMac has a Thunderbolt port could that potentially be used as an input to turn the iMac in to a display? Say the 21" iMac has a Thunderbolt port, could a MacBook Pro be plugged in from its Thunderbolt port seeing as Thunderbolt has Display Port functionality built in?

Thunderbolt gives image to mini-displayport, but if Thunderbolt also accepts image (by Thunderbolt) is a different story... Can't tell for sure, but I guess it does. The main goal of Thunderbolt is to be an all-purpose connection, so lacking the ability of accepting (mini-displayport-) image would be very strange.
