This is getting to be a bit of a joke now :)
I spoke to Apple support and they got the beta people to ring me back.
He told me to re-install through internet recovery. No surprise there.
I tried that and it offered to install Big Sur Beta!!!
So I re-installed from my 11.1 USB installer and am now running 11.1.
On running software update guess what it's offering me - yep 11.2 beta.
Even that offered update to 11.2 beta doesn't say I'm in the beta programme but it's offering it me again anyway.
I'll leave it and see if it forces the install later on, like it did yesterday.
And now my volumes are valled Untitled and Untitled - Data
There is no longer an aoption to unenroll on the update window

A senior tech rang me back and confirms that neither me or my M1 is enrolled in the beta programme.
They have no idea why this is happening and have escalated to engineering.
They'll get back to me tomorrow.

I would install the Beta Access Utility. If you aren't registered as a developer you will need to sign up. On the other hand, if you aren't registered as a developer, I don't understand how you managed to get the 11.2 Beta 1 in the first place.

https://developer.apple.com/download/
It's not necessary to re-enroll if the software update preference shows that the computer is enrolled.

If you want to try and fix it yourself what I would do is sign up for a free developer account, download and run the Customer Beta Access Utility. Make sure software update says that you are enrolled. Immediately do a reboot without installing. Then go to Software Update and unenroll and reboot again. Theoretically that should remove the beta download.

You already seem to have automatic updates disabled. I would double check that before rebooting to make sure it stays off.

I see what you mean but this was all done when the update first appeared. I set it to restore defaults but I just can't get rid of it.
Even with a re-install it offers me Install Big Sur Beta.
Apple don't understand it either. They asked me to confirm I bought it new and asked me if I got it from an Apple store.
I did :)
I'll wait for further developments from Apple engineering and if they can sort it I'll do a fresh install from the internet recovery - hopefully of 11.1

I’ve been doing betas for years—frequently turning them on and off. I’ve never heard of a situation like yours. So strange. I’m really waiting to hear if Apple has an explanation.

I know what you mean.
Apple seem to think that when my MBP contacts Apple's servers (for a re-install) it's picking up that 11.2 beta is the latest install available for my machine and that's what it offers. It just seems to ignore that I'm not on beta programme and that that's not a general issue OS.
Same with the software update.
Very odd.

A small update
Apple tech rang today and had me run an Apple capture data thing and those files are being sent to engineering.
They'll contact me again (hopefully with an answer) on Tuesday.
The delay being due to the Christmas holidays.

Has anyone sucecssfully downgraded to 11.1?

I tried unenrolling and retinstalling 11.1. The install succeeds, but Safari stays at version 14.0.3 which requires Big Sur 11.2 to run. I've had the same other disk and reinstall problems with the beta.

Be aware the 11.2 Beta seems like a one-way trip right now.

It's solved :)
And it was (as most probably expected) sort of my own fault.

I wondered if the installer USB I had installed from might be responsible for the whole debacle as nothing else made any sense..
It was a 11.1 version of Big Sur downloaded from the "unsupported Macs" thread and I wondered if it had somehow adjusted my NVRAM/firmware on the M1 as I suspected that version may have been for Beta testers. Sadly NVRAM, as such, does not figure on the M1 Macs (or at least it can't be reset except, maybe, by a fresh install).
That would explain why my old 11.1 version wanted beta updates (but not why the factory pre-installed 11.0 version would do that unless my Apple ID could somehow be responsible).
Still need to figure that out (unless I'm just being dumb). Maybe somebody could explain that one?

Anyway I followed the second part of this guide (from "Or follow these steps")
https://support.apple.com/en-us/HT211983
to erase the Mac (twice) and then re-installed from my newly made installer USB after downloading a new version of Big Sur from the App Store (as I now have a supported Mac). Curiously that download failed twice
Third time was good though.

It worked :)
I now get the details as shown below when running software update - ie no Betas.
Sorry for wasting everyone's time.
What a knob!

I've sent Apple Support an explanation and an apology for my wasting their time

You'll need to wipe the disk and start over. Downgrading has never been reliable or supported.

I did that already. Twice :)
This time was not a downgrade. I went from 11.1 to 11.1
The downgrade was last time - from 11.2 to 11.1 but I knew that would only be temporary so wasn't too worried.
It seems good at the moment. Everything working as it should, so far.
I did a minimal fresh install this time and set everything up manually.
I'll have to see how it goes ?

I wasn't replying to you. I was responding to the person who had downgraded but still had Safari 14.0.3 on their computer, which is why I quoted that post.
