Ok, to answer a few of the questions...

My intent was actually twofold, at first. The plan was to buy a MP server and rack mount it in my datacenter. I would use the following services for internal company usage:

OD for authentication*
Mail*
Calendar*
Contacts*
Messaging*
File Sharing*
Profile Manager (4 Macs, 3 iPads, 4 iPhones)
VPN
Software Update
DNS*
and maybe Caching

-Most of that can replace my Office365 subscription (if it actually performs well)


And the following for a few medium sized clients:
Profile Manager
Software Update

I was also planning on running Windows Server 2012 R2 in a VM on the box (hence the added hp of the MP over the Mini) to service a few client-facing applications/services that only run in Windows

Now, for internal use, I can continue to use Office365 / OneDrive for Business for about 2/3 the use cases above(*). A production Windows environment is a necessity, so I can get a Dell server to run those applications and just drop that in my DC.

Lots of different things going on here, I know. But the business is growing quickly, and I need to figure out a way to service all the needs of my current clients, as well as several potential new ones. Thanks for the insight gents, it is greatly appreciated.
 
Hmmm, for the price of a Mac Pro you could get a few Minis and spread the services out over the Minis. You could even have a dedicated Windows Mini instead of a VM. I would probably even rackmount in a smaller footprint.

Mind you I'm just throwing ideas out here. I don't know about performance aspects. Although I do run a Mac Mini as a headless server, it's for very light home use.
 
I don't know if it's the best idea to run these services off a Mac for clients. Even Apple doesn't do that any more.

OS X Server hasn't been a contender for anything besides the home server market for a while now.
