I'd recommend though to first upgrade to Mojave ,with RAM and CPU upgrade .
This will turn your MP into a powerful workstation.
It's necessary anyway to upgrade to Mojave to install Catalina, but you could consider Catalina at any time.
Anyway Catalina is not natively supported on the MP 5,1 , so it's not an easy/no workarounds install...
Mojave is known as very stable and is the last OS officially supported.

I’m already running high Sierra so no worrying about thatTo install Mojave read the first post thoroughly before install.
There are some things you have to know/be careful with.
Depending on the GPU installed at the moment, you may have to install High Sierra first,
then swap the GPUs.
Because the RX 580 is not compatible with OS previous to HighSierra (Sierra only with bad performance).

In case of a spinning hard disk, I'd definitely recommend as minimal an SSD or much faster (for ~ the same cost) an NVMe blade:
