No Size 16 Fonts.... I use the default mail program and cannot write a message in size 16 in any font...my font sizes go from 14 to 18.

You can manually type in 16 where it asks for the size. I am, in fact, using Helvetica 16 for message list and message font.
It won't let me....as soon as I try to change it, the size list appears and goes from 14 to 18....

Did you try changing it at Mail > Preferences > fonts and colors?
I'm using Helvetica 16 as my default setting and that's where I had to change it. (I'm not using Tahoe so there may be some difference in Mail Preference menus, but look under preferences to set your default font size)
(I had the same issue you're reporting until I changed the setting in Preferences)

In Sonoma, the "Preferences" are called "Settings", and that may be different in Tahoe.....below there's a screen shot of my selection. 16 wasn't in the list to select, but I typed in the box and it now shows up when I compose an email. (click the image to see the whole thing - which isn't showing in the previews)
and yes, sometimes these computers do frustrating things

@Gary171 - same with me - there seems to be no option to use a Size 16 font (only 14 or 18). In Mail / Settings / Fonts & Colours the font sizes go from 14 to 18. Typing a value of 16 selects the '18' font. I tried this with a number of different fonts and none of them allowed me to select size 16.
The dropdown in Mail 26 only exposes preset sizes (10, 12, 14, 18, 24…), so typing 16 into that box snaps to the nearest preset instead of accepting an arbitrary value. Try highlighting the text in your draft and hitting Cmd+T to bring up the classic Font Panel — that one lets you type 16 as a literal size and it sticks for the highlighted text. If you want it as the default composition size, set the font first in Settings > Fonts & Colors using that same Font Panel trick, and Mail will use it going forward. Clunky workaround but it does actually work in 26.5.
Don't use the drop-down - put the cursor right in the size field and change it to 16. That's how I changed it.
