I currently own the MBP M1, 16 GB Mem,512GB SSD, how much noticeable difference will I see in purchasing the MBP M3 ?

Apple - MacBook Pro 14" Laptop - M3 Pro chip - 18GB Memory - 14-core GPU - 512GB SSD - Space Black.

Current sale is $500 off, Is it worth it ? TIA.
I'd save the money unless you need it. If you use it for business work, then it's a write off and I would do it. If not, save the cash and put it towards something you need. You won't really see much of a difference unless you're actively rendering video, graphics, and other heavy stuff.

The M1 currently does everything I need, some work stuff that MS Word handles well for me, not a heavy user at all, the discount caught my attention and I wanted to be sure I wasn't missing out on something magical the M3 can do.
If you were into something like 3D, Blender, etc. M3 would matter. But if you were into something like 3D, Blender, etc. you would also be looking at a Max chip and more RAM, and at this late date probably waiting for M4.

You'll see literally no difference in performance with that workload. I'd be surprised if your current machine ever engaged the performance cores at all.

I think upgrading to an M3 would be pretty much throwing money away.

People should stop asking for opinions and just buy the device they want.
