If you want to keep your data and get the GM then install 9.1 beta, restore your backup, and using the GM ipsw shift/option update to 9.0 GM. *You may need to reset the keyboard if you use emojis.

I don't see any reason to do that though, 9.1 beta appears to be better than 9.0.

but I couldn't then restore a 9.1 backup ?

I dont see the point if 9.1, its like its jumped the gun(I am probably taking about myself here), are all 9.1 backups useless until 9.1 is released?....if you want the public release software today.

As I was hoping my icloud backup problem would be sorted today.

any idea when 9.1 will be released?

appreciate your advice.

I currently have 9.1 Public-beta, for tomorrow's real deal 9.0 GM, do i simply remove the beta profile from my device now and simply update over the air tomorrow??

Thanks,
If I had to bet on it I would bet that what you want to do won't work. I believe iOS won't show 9.0 because iOS 9.1 is newer. But hopefully Apple's got us covered and this will work :)
