Anyone have work around that's functional for listening to podcasts on a cellular Apple Watch 3 without pairing to your phone? Overcast's apple watch app only provides control for the phone based app and won't play to headphones paired to the watch.

So frustrating that the apple watch cannot play podcast, while the nano easily could.
 
There's an App called Watch Player where you can download podcasts to play directly from your watch. If you do a search in the forum for "Watch Player" you'll find some good tips on using the App.
 
Yes WatchPlayer is amazing - you can download episodes over LTE or WiFi and even search a podcast directory on the watch to add new shows to your watch. It is a completely independent app that doesn’t require your iPhone for anything except initial installation.

Workout++ is the other that will now stream rather than just download episodes over LTE. You do need your phone to setup what podcasts you want on your watch.
 
I don't have a cellular version but have you looked at pocketcasts? Their phone app is nice. Just not sure if it works without the phone. It seems pretty complete.

I believe that app does require the phone to be connected via Bluetooth, the only other one that works halfway decent for standalone watch use is Watchcast, but WatchPlayer is the cream of the crop when it comes to stand alone podcast apps for the watch.
