Of course would love an Apple I, but obviously the chances of that are quite low :p
I would like to have gotten a bondi blue iMac when they came out, other than that pretty happy with what I have currently.

I go really nostalgic with some legacy Apple products:

Macs:

I'd love an iMac G4, the design was groundbreaking for its time and still looks absurdly gorgeous today
imac-g4-front.jpg

A PowerMac G5/Mac Pro, i just like the perforated aluminum tower design, what an amazing powerhouse!

Then on the portable side, The 2002 Titanium Powerbook G4, if you ask me, i wouldn't know exatly why, the design isn't exactly as great as other Apple products and it had quite a lot of technical flaws back then, but it's just that this thing it's made of titanium! and for 2001/02 it really marked a revolution in apple portable design, going from the plasticky one to the solid metallic one that we'd have seen on all the aluminum and unibody macbooks after it.

Devices:
I'd just love to collect old iPods models, I especially like these ones:
first gen iPod and iPod Photo
And a (more) modern iPod classic, I've never owned one of these

AND, an original iPhone, such a milestone product with an amazing design: I love the brushed aluminum back (and btw I'm really happy they got it back on the new iPhone 5 back, the tactile feel of the brushed aluminum on the iPhone its just amazing!)

AND, last but not least, my all time favorite Apple peripheral and one of my favorite products at all: the 30 inch aluminum cinema display:

This display is just gorgeous. Period. in my opinion its absolutely the best display Apple has aver made in terms of design and features. to me they're much superior to the current thunderbolt displays: higher resolution, amazing design, much better aspect ratio, and the monitor doesn't have annoying glare at all. I'm looking forward to get one of these used soon.

Then, I have to say that another product that was on my list was the great unibody Macbook Pro with antiglare 15 inch display. In my opinion, the best Apple laptop until now. 15 inch its just the perfect size for a portable computer to work with and yet to be compact enough for carrying, and as you may have noticed i don't like glossy screens so the anti-glare one made this the perfect laptop for me.
I had been wanting one of these for a long time and finally I got one used in mint condition earlier this year, amazing!

Mint condition Apple I prototype. Or if no prototype was made but simply sold as they were built then the first one to be produced. Along with any accessories and software Woz made for the Apple I.

Keep it long enough for people to ooh and ah over and be proclaimed king of the Apple fanboys on the tech sites. Screw around with it for a while until I get bored and lament that I can't actually use it for anything. Then sell it and buy a house with the money.

Apple stock :D.

Was going to post a picture of a rMBP till I saw this.

I calculated that if I'd brought Apple shares instead of my first MacBook Pro and iPod, the value of those shares today would be about $16,821.60

Opportunity costs eh?

I've still got my 1st gen iPhone in it's original box, but it is not in the greatest condition after both my mum and my brother borrowed it for a while. I'd love to have the same phone again, completely new, just to get out of the box now and again (yep, sad, I know).

Wish I could have afforded an iPod Hi-Fi at the time, great looking speakers.

My 2008 iMac. Boy, how I miss that thing :(
It was so much classier and cooler than my current MBP, I'd switch in a heartbeat if I didn't had to be mobile.

Unless Apple is coming with a nice redesign of the iMac, I would still get the 2007-2009 model since I don't really like the 2009-2012 design.

Surprised no one has mentioned one of these for the "old" category yet.

I always wanted the 12" PowerBook. I was a Windows guy until I tried my friend's PowerBook. But by then they were making the shift to Intel and it made more sense to get the white MacBook.
