I have it hidden all the time and removed all the apps from it.. I launch any app I need through Spotlight (Spacebar + Command) and switch between them with Alt + Tab.

I just recently switched as well. For icons of applications, you can simply right click (or ctrl+click) on them in the Finder and click "Get Info". Then, you copy an icon you downloaded. Next you click on the icon in the top left of the "Get Info" screen, and go to Edit->Paste.

For other icons, you can use Candy Bar (Shareware) or LiteIcon (Freeware).
