I only keep the Apps that I use regularly in my dock:

Finder, Mail, Safari, iTunes, iPhoto, iWeb, Microsoft Word, Microsoft Excel, iCal, Football Manager 2007 | Applications folder, Documents folder.

its from the adobe creativity suite.. A couple hundred dollars if I recall. Although, you could certainly find an icon package with icons that look like this.

heres mine: all the apps that are open(besides quicksilver and finder) are set to automatically open when i boot up my mac.. so its usually just the three icons on my dock..(finder,quicksilver,and trash) of course
so left to right:Finder,Quicksilver,Safari,Adium,iTunes,Mail,minimized itunes,trash
