I love the new look of the lock screen, but I think it would be even better if there was the option to remove the slide to unlock, and the two arrows on the top and bottom. The home screen is nice as well, except that dock sticks out like a sore thumb.

You can actually remove the two arrows under the notification center and control center preferences by disabling the 'access from lockscreen' option.
This configuration provides a simpler lockscreen interface and also prevents you from accessing the notification and control center accidentally

I really struggled to find a wallpaper that went well with both the icons & the stupid 'I don't know what colour I want to be today' dock. The 4 doesn't have the fancy transparency effects found in the 4S & 5 and this is the best I could do.

Why does the Whatsapp icon look flatter here, and in many other screenshots of iOS 7? When I used the beta last month the Whatsapp icon was the same as it always is.

iOS 7 removes the gloss that you can add to your app icons. However, some icons, like Twitter (I think), actually have the gloss as part of the icon and therefore iOS 7 doesn't remove it.

I like using the notification/control center from the lockscreen, but an option would be nice to switch off the bars on the top and bottom, without disabling them.

Suppose I put my favorite apps on the first screen, why would I need a dock in the first place? As of now, I can use both my iPhone and my iPad perfectly without a dock. Am I the only one?

Seriously, I too dislike iOS7. It's just another extreme UI like skeuomorphism was, and not at all the stylish minimalism I expected from J. Ive.
The sad truth is, we'll all (have to) update.
