My current set up. A nice snowy wallpaper to show my excitement for snow in the Bay Area. Wishful thinking..
I'll attach the LS theme, but will provide the link for the SB theme because I can't upload that for some reason. I'll also provide the dock. Of course, all credits go to the original creators of the awesome themes.

Also, a couple of questions:
Where do I find themes/etc for the status bar on top? Are those called anything specific?
Some icons are understandably not included with themes. Do I replace them by simply finding them via SSH and swapping in the new icon?

Generally speaking, they're called signal/wifi themes although there is some room for variations here. These will change the signal & wifi bars on your phone. Sometimes they'll have other icons like for auto-lock, alarms, 3G/Edge, etc.
Yes. Most of them are usually labeled icon@2x.png (iPhone4) or icon.png (3G/S). Some of the are tricky and will use a capital I instead of lower case one. Most capital Icons are usually found within non-native apps.

The biteSMS icon is from the Genesis theme. Jackie (creator of the theme) made blue, green, orange and purple versions. They can be found here towards the middle of the page: http://macthemes.net/forum/viewtopic.php?id=16808918&p=5
I changed the green to a different hue and made a red as well. I've included them in case someone's interested. In the zip file you'll find all four colors and also the smaller icons to replace the quick reply icon and some others. I SSH them to Applications/biteSMS but I think WinterBoard will change the smaller ones too. I'm not completely sure though.
