It might be easier to download a different NC theme you like better and just place that above the one you dont like in Winterboard. Otherwise download a different one and look at what files are part of the NC and you will know what to delete from your existing theme. Here is a NC theme you could try:

It comes with the Auros theme, or is named Auros in Bytafont anyway.
