There is my version, I shortened it to fit my 3-Icon dock, but all credit goes to dsg over at MacThemes, he hooked me up with the original.

What do you mean? Just use your regular homescreen wallpaper that you assign through Settings. Themes by themselves don't need Wallpaper.png in the root folder to work, summerboard mode or not. All I'm saying is there's two ways to make Winterboard use a custom dock. Since the one you have seems to be 3G/3GS resolution, using the Summerboard trick will make winterboard scale it up for you and make it the right size.

Thanks for the reply, but I was talking about the wallpaper. I would ideally like the wallpaper to change with the selected theme ( as opposed to going into settings each time I change the theme ) AND I would like to be able to disable summerboard mode...

Its called 'Sweet Candy' mate, if it's not in Cydia you'll find it at Macthemes.

Very weird, it's the same file I'm using on mine. I'm using an iPhone 4 w/ 4.0 OS. Not sure why it would look differently on yours. Here is the file uploaded;

I know that I need to download some app called iPhone explorer or something like that for my mac. From there, how do I get the themes onto my iPhone?

I use Diskaid to move files on to my phone. You'll want to put the themes into root/library/themes and then select them in winterboard.
