7 Months later and finally fixed!
So my original issue of having to hold the option key during startup remained until just the other day. The fix:
Upgraded to Lion, but couldn't install it on the RAID 0 boot drive, so had to put the original 1TB drive back in the Mac Pro, use Software Update to get it current and then install Lion on it.
Downloaded the Lion Installer for the 1880i from Areca. Installed the driver. Restarted, updated to ARC1880BOOT. Rebooted, updated to ARC1880FIRM. Restarted, updated to ARC1880MBR0. Rebooted.
Used Migration Assistant to transfer Applications from RAID 0 drives.
Used Disk Utility to erase the RAID 0.
Used Carbon Copy Cloner v. 3.4.1 to clone 1TB boot drive to the RAID 0. Used Startup Disk in System Utilities to designate RAID 0 as Startup System. Rebooted... and FINALLY DO NOT HAVE TO HOLD OPT!!!!
Sheesh, what an ordeal. Pulled the 1TB drive and am now happily working of the RAID 0 2x120GB SSD drives, along with the 6TB RAID 5 3 disk array.
