Can i do all the stuff on the Mac - create custom IPSW, then do the restore on the Mac, then plug the iPhone into my PC and restore from backup there?

Good question, but I've never tried it or read about it. Are you absolutely sure you used the right firmware for your custom ipsw creation? I've seen some that picked the 3G version when they needed the 3G version. You should check.

Hmm - well I have the 3G S iPhone and was pretty sure I got the correct version. Can you point me in the direction of the one I need? :)

Do I still need to perform the DFU Mac OS X work around? I'm using Leopard on my blackbook. Thanks...been waiting to JB for a long time now!
 
No, I don't care about unlock, so I said "yes I can activate it through itunes" because I'm on at&t, but my phone has no signal at all

You're not supposed to Activate the phone if you're on AT&T. You would only Hacktivate the phone if you weren't on AT&T. Rebuild your custom firmware and next time uncheck Activate and when you're done the phone will have a signal. Voila!
