As researching Mac compatible GPUs ultimately ends up at Apple's "Use an external graphics processor with your Mac" Apple Support page I'm wondering if the absence of the Radeon VII in the list is due to its EOL state from AMD and/or Apple's end of support state. I'm hoping it's not completely the latter.

I'm hoping to throw the 5700XT into the MacPro soon to see if I still experience the occasional com.apple.DumpGPURestart log spams that freeze up the system during some games I play. Thing is it runs Unigine Heaven and Valley benchmarking beautifully, and multiple times at that.

@UmarOMC have you gotten anywhere with your 5700xt into a Mac Pro. Im wondering as I have purchased a Radeon Pro W5700 but when I put it into my 7.1. the kernel_task process takes about a consistent 30% CPU usage... the OS recognizes the card ok.. when I pull it and run the stock 580 mpx module that process is a non issue

The card rarely gives me problems and I don't see that kernel_task usage you mention. You putting it slots 1 or 3, correct?

I have cMP 4.1 with radeon vii and I had kernel panics with the same symptoms, gpurestarts in mojave when enabling hardware acceleration with additional kexts. Clean install helped. No more kernel panics with full Hardware acceleration.

PROBLEM.... SORT OF FIXED/REDUCED, Been having this problem just like everyone, noticed that it only crashed when things were idle, and once when it looked like it was going to crash I started to move the mouse and it came bace from the edge. I got the idea to try a "Mouse jiggle USB port mouse mover" which I turn on anytime I am away from my screen (The Jiggler I have has a built in power switch) and for the last 2 months it has not kernel panicked once when the Jiggler was on. This proves that it is a problem when things are Idle and Apple needs to fix this.
