Nice thread.
My resting calories are coming out to be about 1800 kcal each day.

While this is probably based on standard formula, true resting calorie will depend on individual metabolism.
I'm sure it is within acceptable range for people who fall within 1 standard deviation, but for the other 31% on the low and high end, it could be pretty off.

Based on my own tracking of food intake though, I think it is within +-200 of where I estimate my resting kcal to be.

Less than 200.

You should visit rippedbody.jp and see if the numbers from health app are similar to what you get from that website's estimate of your resting.

One other change I've noticed is that whatever they consider to be exercise seems to have gotten more liberal. My exercise is walking my dog an hour or two a day. Before the update I barely nudged the exercise circle. Now I get my 30 in easily. No change in activity.

That's better, I guess :)

So the "resting" calories appears to change on a daily basis for some. Is is still calculating resting calories when the watch is on charge/ not on the wrist?

It still waaaay underestimates my active calories unless I'm using the workout app. The other day I spent four hours helping a friend of mine move some stuff. I was working hard the entire time, carrying boxes up and down stairs, and I was drenched in sweat by the end. The watch only gave me credit for 15 minutes. On the other hand, I just took a short, ~15 minute bike ride without using the workout app and I got 8 minutes of exercise credit out of that.

That actually makes sense in the way the watch functions... If the watch uses HR to judge when you are expending effort worthy of exercise, and if the watch only takes an HR reading when your arm is still, then it is unlikely to take many HR readings and therefore would not know you are active. On the other hand, in workout mode, HR readings are continuous.

at this point, resting calories seem pretty accurate. i've been estimating my TDEE using this as a baseline and it isn't that far off from what my TDEE might be calculated from weight tracking.

It sounds like you're experiencing an issue with your watch's resting calorie calculation. Since you're 4 foot 11, the watch might not be accurately reflecting your metabolic rate.

You could try adjusting your settings to see if there's an option to input your basal metabolic rate (BMR) manually. Additionally, it might be helpful to use a reliable BMR calculator to get a more accurate estimate of your resting calories. You can check this link for a helpful calculator:BMI calculator. This might give you a clearer idea of your actual needs!
