All the stuff is there.. Just checked now apps are downloading.. Now the same procedure shift+restore by dfu but the ipsw file is 9.0.2 right?
Yes, EXCEPT SHIFT+UPDATE or else you loose data. Also, wait until its done restoring. You can tell its done when on the lockscreen it no longer says restoring from backup below the slide to unlock text

It works going from 9.1 to 9.0.2 this way, it does bork the Apple Health though, you can't read it nor write to it.

You can fix it with making an unencrypted backup to iTunes, which doesn't contain Health data, then restoring this backup to the phone. This clears Apple Health data storage and makes it able to write to it again.

I've just downgraded my iPad and jailbreaked. Thanks! After that, I tried this method on 5s, but it doesn't work.

"The iPhone couldn't be updated because the firmware file is not compatible."

Yes, I've already checked twice that I've downloaded the right IPSW. Any help?

Probably you downloaded the wrong version. There's 2 different versions for the 5s. The cdma (Verizon sprint) and GSM (att T-Mobile everything else) versions.
