The „reverse volume up and down buttons“ function works as before on my new iPad Pro 13! The settings have been transferred from the old iPad via iCloud Backup.

But: The setting is actually not available in the settings menu. I think it is a bug in iOS 17 in relation with the new iPad. On iPad Pro 5th generation and iOS 17.5 is this setting visible.

Absolutely weird to have volume buttons inverted compared to iPhone. The only time it makes sense is how they now match the new Magic Keyboards volume function buttons. Right = Increase, Left = Decrease

This has been making me nuts. I get what they’re trying to do, but I don’t think of them as left and right buttons that change when I flip the iPad, I think of the buttons like they’re buttons wired to a function. I think of them as the button close to the corner and further from the corner.

I dunno, maybe this will be like when they inverted how scrolling works, which was maddening for a few days before I got used to it, but I’d really like the old way back.

I sympathize, and for people like me, who have tons of devices (many iPads as well as many Android and Windows tablets) and ALL devices work the same exact way, it's very hard to get used to having those button inverted in just one device.

I’d love someone at Apple to explain this? Why change it (or remove the setting that allows users to change it)?

No idea why they removed the option to change it. But in landscape the buttons now “move” the volume in the same direction as the on-screen volume display. When you press the “right” button the volume bar moves to the right, and vice versa when the “left” button is pressed. I can appreciate the logic that it could be strange to press a “left” button and have an on screen bar move to the right. For people with AV receivers or who are old enough to remember volume knobs in other settings, turning them to the right also increases the volume.

But I also appreciate that it’s weird to have a button do one thing in one orientation and then the opposite thing in the other. Ideally we’d have the option, but… c’est la vie.
