After too many app crashes and kernel panics with Catalina, I went back to Mojave today. Still restoring everything, but at least it looks like I have a stable machine again. Catalina is nice to visit, but not a place I want to live.

Reverted back to Mojave

I'm assuming you installed it with the .1 update released yesterday? I had the issues you describe with the .0 release but everything is ok now.
Reverting back was painful. I had to completely wipe the drive and delete the data partition. I used the shift-option-command-r to reinstall the original OS that came with this machine. Mojave 10.14.4. Then had to go through the Mojave updates and am in the process of reinstalling my apps and set it up for development again.
welcome back. I was in similar situation, now I am back to 10.14.6
Won’t upgrade until 10.16, probably. I am not gonna miss anything by skipping 10.15.x completely.

I have been testing Catalina on an external SSD, having 1) done a clean, fresh installation of OS 10.15 (twice), and recently 10.15.1, and 2) migrating/copying needed files, data, settings, etc. from my OS 10.14.6 (latest version of Mojave) environment, and everything actually works fine. Except for SuperDuper! and TechTool Pro (waiting for Shirt Pocket Software and Micromat to release Catalina-compatible versions of those programs), all my third party apps work like a charm: VLC, Transmission, Thunderbird, LibreOffice, Google Chrome, Firefox, Opera, Quicken 2017, AppCleaner, EasyFind, Klondike Forever, 1Password, ClamXAv, Malwarebytes, Onyx (Titaniun released a Catalina specific version about 2 weeks ago), VueScan, etc. And my Canon printer works just fine. But I will not permanently "move" to Catalina until both SuperDuper! and TechTool Pro have Catalina-compatible versions available. No big deal, as 1) Mojave is working like a charm, and 2) there is nothing I must have in Catalina.
I am still on Mojave, i was going to wait until 10.15.3, but i think i am just going to wait until 10.16, as i think it will just be an improved version of Catalina, High Catalina etc
Because it was a brand new iMac, I upgraded to Catalina before I made any Time Machine backups. I'm thankful for Internet recovery.
To return to the original delivered OS, use shift-option-command-r. It will allow you to reinstall the OS that came with the machine. Make sure you wipe the erase the entire drive first and delete the data partition that Catalina creates.
If one uses Disk Utility to Erase and Format the drive, won't that also get rid of the data portion created by Catalina?
Yesy if you do the entire drive. The data portion is a separate partition. I deleted the partition and erased the drive. I know that works.
Understand. But whenever I want to install a new version of the Mac OS, I always use Disk Utility to Erase and Format the entire drive. Given that both of my internal SSDs are not "directly" partitioned by me, that works fine (there is the hidden Recovery HD partition created by a Mac OS installation, and in my case I also have a small eDrive partition created by TechTool Pro (via my choice)). After the installation (and after migrating/copying needed files, folders, data, settings, etc. from a recently completed SuperDuper! backup), the Recovery HD partition gets created automatically, but I have to launch TechTool Pro to create the eDrive partition.
