Here are the choices:

Two 2.40GHz 6-Core Intel Xeon processors (12 cores)
Two 2.66GHz 6-Core Intel Xeon processor (12 cores) [Add $1,200.00]
Two 3.06GHz 6-Core Intel Xeon (12 cores) [Add $2,400.00]

There's no way I can afford to add 1,200. much less 2,400. !!! I looked at the Geekbench results but they seem only to be comparing the highest end tower with the other lines.

BTW, do you know if the first model Cinema Display and Studio Displays will work with this model?

In that case go for the 2.4 12 core as it will kick all of the others asses (except the higher clocked 12 cores) and it seems to be at a less painful price point.....as for the the displays, sorry cannot comment as i have not had/used either....

OP, are you sure your programs do scale well upon additional cores? If not I'd consider the 6-core machine..which is cheaper and even faster in some scenarios than the base 12-core model. Just saying, haven't found any infos about your programs..and am not familiar with audio related work. I was in a similar position like you and the advice given was either the 3.33 hex-core or at least the 2.66 12-core because of its turbo-boosting over 3Ghz regarding single threaded programs.
