I'm kind of in the same camp. I loved going from non-retina to retina and seeing those sharp images and letters that almost looked like printed paper on my iPhone/iPad screen. I loved going from 2 speakers on one end of the iPad to 4 speakers one on each corner of the iPad. I loved going from a non-laminated to a laminated screen. I was blown away the first time I saw the iPad Pro's ProMotion screen.
What did NOT seem like an earth shattering upgrade was going from my iPhone 7 Plus LCD screen to my iPhone X OLED screen. I just honestly don't see a difference. Yeah, I know, the black colors are pure black because OLED doesn't need to light up every pixel all the time, but I just don't see any real world difference in my day to day usage.
Keep in mind that for the iPad Pro to go OLED, the displays have to get down in price AND they have to be able to support ProMotion just as effectively as an LCD does. I'm not sure OLED is ready in either of those categories, and I really don't care if it takes another generation after this one for the iPad to switch to OLED.
