If I just jailbroke yesterday on 7.0.4 with evasion 1.0.4, and run the changes update in cydia, am I good with this cydia substrate thing? I only ask because I downloaded bitesms yesterday and it crashes right after launch, and a quick search here brought me to the cydia substrate potentially being the issue.

Yes you're good. That's probably an issue with bitesms.

For bitesms you need to add the beta repo
test-cydia.bitesms.com
