One compromise is to go for the Costco option, which uses the faster 128GB SSD but only 4GB of RAM (not a stock configuration). It’s on sale right now for $50 off their already reduced bundle. Been toying with picking one up.
The 4gb RAM / 128gb SSD variant has become a "stock" configuration at the Microsoft Store, BTW.

I think I may do this. No reason to upgrade my Macbook Pro for 2-3 years at this point, works perfectly for me with 8 GB of RAM and 256 Storage. An 8GB GO with a Cover can be had for $550 or so, plus I will upgrade the iPad Pro over the next few months. Should be really set on Apple products until the next laptop refresh.
 
I can’t speak for the OP, but MacOS Office doesn’t function for macros. They added macro capability but trying to code in it is painful to the point of being unusable. I could never do the work I do for my corporate job on a Mac. My SP4 handles it fine.

I don’t see the iPad getting parity with Windows Office until Macs do. Hopefully Microsoft will get on that, but given that they’d be cannibalizing their own device sales by creating parity, I don’t know that they will.
Which is unfortunate. Satya Nadella is a good CEO and has made some really good choices, but he could still do more. Most of Microsoft’s value is based on Azure and SaaS now. It shouldn’t matter whether someone is running a Mac, Linux, iOS, or Windows. Office should have feature parity. Surface likely never will be a major revenue driver for Microsoft unless they somehow decide they no longer need the revenue from the major PC vendors. Up until now, the Surface line has mostly been a series of “showcase” devices to ensure that Windows OEMs continue to innovate.
