NOTE, JUST leaving it here until I make sure I have the right ingredients, I made it on the fly from memory and they did NOT come out as expected, looked the same they simply did not taste the way mom cooks it, I watered the ingredients too much from the list given.......so no exact detail UNTIL I am happy.

*****chicken broil*********
cook tortillas with lard or vegetable oil, dry out excess oil/lard.

use sauce inside of enchilada, add the chicken roll it

place enchiladas rolled into a pan or plate that you can put in the oven.

looks great but it did not taste the way it should have, I'll post up the ingredients & proper procedure when I go to my sisters house and see just where I dropped the ball.

Okay.. gonna ask for some details here, so definitely hit up your sister's house and find out!

Manchego cheese? I ask because while I can see a Colby Jack being used, a monterrey jack could give it some kick..

mixer for shredding the chicken.. wouldn't have thought of that.

Other than that, damn that looks good! Have you tried this with shrimp?

typically we make them with just cheese (fresh Mexican cheese) or chicken, I used mozzarella on top but good point on the Monterrey jack.
saw the trick in one video I watched so I decided to give it a spin and it worked like a charm :p

One last question.. Straight white onion, sweet yellow (like a mayan sweet), or could you use a Walla walla?

I'm asking because I'm definitely trying this, and grabbed a batch of Walla Wallas before they went out of season.

As a side note: Walla Wallas make the best onion rings and come a close 2nd for sauteeing, next to mayan Sweets.

yuk...... we are just two different people. You talking to someone who spends their entire life not cooking.
 
Looks pretty good. Might want to try using Mexican oregano next time, though. Slightly different taste profile than Greek.

Oh, hahahaha, yeah, that didn't describe it very well, it's pepperoni bread, each of those is way bigger than a football, two kind of fresh deli cheeses, Boar's Head pepperoni, Italian seasonings, and fresh bread dough ...

When you slice through it, there's swirls of meat and cheese!
