Agreed, I'm enjoying reading them @jkcerda and thanks for sharing them with us; it is a great way of saluting and paying homage to your mom's memory.
 
I've been looking at this thread for a while now and I have no idea what "sweet cheese" is apart from the mixture used in a danish. Are you talking about the compressed undersalted queso that has those nice ridge patterns sold in stores? I buy those and marinate them in oil and spices, dash of balsamic for a week or two and it's a hit with people.

sorry, what I mean by "sweet cheese" Enchiladas was that unlike most enchiladas that happen to be spicy, mom's recipe are pretty tame & borderline "sweet". not to mean the cheese itself was sweet.
