I don't think so. I didn't see the option when I switched from my Air 2 to the 10.5.

I transferred the SIM from my Air 2 to my 10.5. I can't see the option directly but I can still "reload" using my account credentials and logging into T-Mobile online via a regular web browser (and not through the cellular settings in iOS).

I don’t have a t-mobile SIM. Do you have the T-Mobile link?
 
You need the T-Mobile SIM in order to get the options. As far as the link, it is just the regular T-Mobile login page.

Do you know how this works with the new iPad Pro 2018? The 5GB/5 month option is available on the iPad, so I assume I don't need a T-mobile SIM card?

I reckon it works with the eSIM as well. It worked with the Embedded Apple SIM on older iPad Pros and Apple SIM on Air 2 and 5th gen iPads.
