Just a quick update - I ended up getting a 1TB SSD and a dual drive kit, and although the first few days were pretty slow (indexing no doubt), it's now much, much faster than it's ever been under Mojave, even with Photos still doing its thing and chewing up 50+% of the CPU on analysing faces and whatnot (50k photos, so not surprising).

So, I asked you to talk me out of a new Mini, you did, and I'm very glad you did! Loving my Mini's new lease on life. Thanks everyone!
