My setup

All the media resides on a Qnap T-410 with currently 5TB Space.

Plex Server (and multiple other servers) on Mac mini (Early 2009) - 3GB Ram - Lion Server - always on

Plex Client and Airserver on Mac mini (Late 2006) - 2GB Ram, CPU upgraded to 2GHz C2D and Crystal HD equipped

hd1080s awesome Plex Client on 40" D6500 Samsung TV

Just completed my setup, DVD rips are a work in progress:

- Mac mini 2.5GHz i5, 4GB RAM, 500 GB HDD int running Mountain Lion and Plex
- Movies and TV shows located on a Synology DS212J with 2x3TB in SHR Raid
- Samsung 58nch Plasma
- Denon AVR 391 5.1 receiver
- PS3

Samsung, Mac mini and PS3 connected via HDMI to AVR.
 
Crumbs, my setup is archaic - but then it is only serving music and photos.

Mac Mini G4 1.5GHz 1GB RAM (yes, seriously) running:
OS X 10.5.8
iTunes shared library
iPhoto shared library
Logitech Media Server (a.k.a. Squeezebox server, Slimserver)
...and a file server, etc.

Music on attached FW 400 drive (FLAC for the Squeezeboxes, 320kbps AAC for iTunes; CDs are encoded simultaneously to both formats by Max and added to the iTunes library)

Backup of the internal HDD and the FW media to another FW external drive using CCC.

erm... that's it for the server. :D

This serves 3 hardware Squeezeboxes, 3 Macs running Squeezeplay, and any Macs that want to browse the iPhoto library.
