Exactly what I did, sold my top spec iMac I now have an essentially headless Mac mini which i use to manage lightroom and other small tasks better suited to a mac. I use my ipad to control it, and its a little like having a macOS app. It’s very very cool. I use a Logitech mouse and keyboard which has an on-the-fly Bluetooth switcher.

an iPad actually brings new experiences, interaction methods
This was one of my reasons for wanting to switch. My earliest computer being a 386 and I’ve spent a Lot of time sitting in front of one, where the way you interact has been mostly the same. As my needs had changed, it‘s able to work for me.

I voted no because comparing an iPad to a traditional computer not taking into account the users needs, of course the iPad falls short in lots of areas, but even a phone can make a computer redundant to someone if it does everything they need.
 
@Wackery Log in with VNC viewer, and use sidecar. It’s as headless as I can make it. I have a long hdmi to use with a nearby monitor should the need arise. But it works pretty well so far. A bit clunky but hoping for sidecar improvements.
