I'm pretty sure it's something you'll be able to do in the next coming weeks. I'd keep my eye on Griffin for this type of thing.

Personally, if they can supply an ear phone adaptor I would be pleased. I have enough ear phones and I'd like to know I don't have to shell out $80 more bucks to get something fairly comfortable.
 
The new Shuffle - which will accommodate any headphone - is perfectly fine for this sort of usage. Set the volume with the Apple headphones, then attach your preferred ones, and turn it on.

That's great, until an extra-loud song comes on and you want to change the volume.

I went to the Apple store today and bought two 2G shuffles. That should keep me going until that far distant future day when Apple returns to a more logical design.

If you set the "volume check" to on, shouldn't be an issue.

It's not as bad as I thought it would be especially since most of the time I use the shuffle I'm active and it's actually easier grabbing the headphone cord than finding the play controls on the player itself. I'm sure Apple or someone else will come out with a control so it can be controlled without the headphones. It wouldn't have been a big issue for Apple to have mimicked the earphone control mechanism on the side of the player to allow untethered control.
