I agree, though; Final Cut Pro X and Lion do not exactly instill confidence...

We have a 2006 MacPro and we've been holding off for years but now it looks like we might just move to the iMac to replace that system. I just have little confidence we'll see anything compelling soon or if at all.

The high-end iMac is powerful, but it is not cheap!

If you go take a look at the Avid forums for Pro Tools, you will see a bunch of people jumped to Windows 7, especially people with $10,000 worth of PCI-x HD cards. There are plans available for building a box for Pro Tools for under $1,000 that outperforms the Mac Pro. For an application that was completely dominated by Mac in the professional field, you are starting to see a lot of Windows machines.

Whatever, it is just a tool. I am not going to shed tears as long as there are viable alternatives. Unfortunately, Windows 8 is looking Lion-esque!
 
But Apple doesn't supply a HD or SSD that can even saturate SATA2.

Doesn't matter. You can already buy SSDs today that need SATA 3 to realize their maximum performance. In a year or two the percentage of these drives will be even higher and I certainly don't want the longevity of my machine crippled by sticking with a SATA connector that is already limiting.
 
Apple might take the opportunity while they are waiting for Intel, to redesign the Mac Pro. I know, people have been saying this for several years now, but I believe that the next pro machine coming from Apple... if they even release one, will be able to rack mount and be in a smaller form factor.
 
And Apple doesn't cater to the minority that aren't buying their stock SSD or HD. Apple doesn't care about the longevity of your machine, they want you to upgrade every cycle.

It isn't exactly catering to us by keeping up with technology. Either way, they are already moving to SATA 3 across the board.
