Maxed-out 2011 iMac owner here, I feel your pain.
Spent a lot of money 11 years ago buying an over-spec'd (for my needs) quad-core machine.
Decade later in many ways it's still as good as I need except the glacial hard drive needs swapping out for an SSD.
But the OS is pegged to High Sierra and some parts of the the hardware is obsolete in ways that didn't exist 11 years ago, such as the 2GB gfx card which isn't metal compatible.
My life lesson from that is don't over-spend on a machine to meet the needs you think you'll have in five years time, because in five years time it will have been obsoleted in ways you can't currently imagine or plan for.

Funny about the SSD. The HD in my fusion drive died, so I replaced it with a 2TB SSD, years ago at this point. So in many ways my iMac still works great. But as you also observe, it's the other stuff that you hadn't even contemplated, that crops up.
